Butternut squash is a wonderful vegetable. Low in calories, high in vitamins and nutrients and with a sweet, nutty taste that’s similar to a pumpkin, it’s the fall veggie that you’ve hopefully come to love – and if you haven’t yet, it’ll definitely be one you learn to love soon after making this butternut squash casserole recipe. 

Roasted butternut squash already makes for a delicious side dish, but when combined with the sweet and tart flavor of apples, it becomes something else entirely – a unique dish that combines all the flavors of fall into a side that’s perfect for any Thanksgiving or Christmas meal. When fall comes around, I always make sure to grab a few butternut squashes and pumpkins so I can savor their delicious flavors, and with this butternut squash and apple casserole, I make sure I’m getting the most out of them.

Butternut Squash and Apples – A Power Couple

This casserole recipe features just two ingredients at its core – butternut squash and fresh apples – but with added brown sugar, cinnamon and chopped pecans, it becomes a nutty, tart and sweet dish that warms you up inside (which is perfect for those chilly winter months). 

There’s a perfect balance of flavors that comes through in every bite, and roasting both the apples and squash causes them to really release their flavors. Plus, it’s very easy to make, making it the perfect companion or side dish. Just prep the casserole, place it in the oven and start focusing on another part of the meal – it’s as easy as that!

Ingredients

  • 2 pounds butternut squash (approx. 1 squash), peeled and cut into ½-inch slices
  • 3 medium tart apples, peeled and thinly sliced
  • 1/3 cup packed brown sugar
  • 1 1/2 teaspoons all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons butter, melted
  • 1 cup chopped pecans

Instructions

  1. Begin by preheating your oven to 350 degrees Fahrenheit.
  2. While the oven is heating up, prepare your ingredients. Peel your squash and cut it in half lengthwise, taking care to scoop out the seeds. Repeat this action for your apples.
  3. In a small mixing bowl, mix together the cinnamon, flour and brown sugar until completely combined.
  4. Layer the squash and apple pieces in a baking dish coated with cooking spray. Sprinkle the butter, cinnamon, pecan pieces and brown sugar mixture over the top, and then drizzle the melted butter over everything.
  5. Bake uncovered until the apples and squash are tender and thoroughly cooked (approximately 45 minutes).
  6. Serve warm. Enjoy!
