Ruth’s Glazed Strawberry Pie

This delightful dessert is the perfect centerpiece for any summer gathering, combining the natural sweetness of homegrown strawberries with a simple, yet elegant, presentation.


  • 2 Quarts (8 cups) strawberries, hulled and divided
  • 1 Cup granualted sugar
  • 4 Tbs. cornstarch
  • 1 tsp. lemon juice
  • 1 pre-baked Eckert's Frozen 9-inch Pie Crust
  • Whipped Cream for Garnish.


  1. Using a potato masher, crush 2 cups of berries in a saucepan.
  2. Add granulated sugar and cornstarch to crushed berries.
  3. Cook and stir 4-5 minutes over medium heat until thick and clear. Add lemon juice. Cool
  4. Cute remaining berries in halves and add to cooled mixture.
  5. Pour into baked pie shell and chill at least 2 hours.
  6. Top with whipped cream and serve.
