Ingredients
- 2 Quarts (8 cups) strawberries, hulled and divided
- 1 Cup granualted sugar
- 4 Tbs. cornstarch
- 1 tsp. lemon juice
- 1 pre-baked Eckert's Frozen 9-inch Pie Crust
- Whipped Cream for Garnish.
Instructions
- Using a potato masher, crush 2 cups of berries in a saucepan.
- Add granulated sugar and cornstarch to crushed berries.
- Cook and stir 4-5 minutes over medium heat until thick and clear. Add lemon juice. Cool
- Cute remaining berries in halves and add to cooled mixture.
- Pour into baked pie shell and chill at least 2 hours.
- Top with whipped cream and serve.
