Grilled Peach Salad

This week brings both excitement and sadness to our family. Some of the seventh and eight generations of Eckert’s are headed back to college to embark on their next academic endeavors. We are excited for them but we will sure miss seeing them in the store, restaurant and around the farm. Katie, Katherine, Kristin and Aaron were all home this summer and able to help out with summer harvest season. It is always fun to have more family around to work in the business. We will certainly be thinking of each of them as two return to college and two take on graduate school.

Monday night it was our pleasure to host Katie and Katherine for dinner. I tried a new Grilled Peach Salad and both of them enjoyed it along with fresh tomato salad, grilled steaks, fresh bakery bread and quinoa. Chris and I didn’t admit to burning the first batch of peach slices! Be sure to keep a close eye when grilling peaches. The sugar in the fruit is quick to burn if you cook them too long.

Everything else about this recipe was straight forward and simple. I just loved the colorful presentation in a shallow bowl. Since peach season will soon coming to an end, be sure tostop in this weekend to pick up some Eckert’s peaches before they are all gone!!

Ingredients

DRESSING:

  • 3 Tbs Champagne vinegar
  • 1 Tbs Dijon mustard
  • 1 tsp Eckert’s Pure Honey
  • 1/3 cup olive oil
  • Kosher salt to taste

SALAD:

  • 3 peaches, sliced
  • 1 Tbs olive oil
  • 5 cups greens
  • 1/3 cup red onion sliced thin
  • 1/3 cup almond slivers
  • ½ cup feta crumbles

Instructions

  1. Preheat a grill pan or grill to medium-high heat. (If using grill, I recommend a placing the peaches in a grill basket or bowl.) Whisk together the dressing ingredients and season with salt to taste. Set aside. Place the peaches in a bowl and drizzle with olive oil. Toss well. Place on the grill and cook for 1 to 2 minutes on each side. Place the salad greens in a large bowl. Top with warm grilled peaches, onions, almonds and feta. Drizzle salad with dressing and serve immediately. Serves 6.
