Ingredients (Serves 4)
3 Tbsp fresh lemon juice
1/2 tsp salt, plus more to taste
1/4 tsp freshly ground black pepper, plus more to taste
3 Tbsp extra-virgin olive oil
1 1/4 lbs homegrown tomatoes (a mix of cherry, grape, plum, or slicing tomatoes)
6 oz fresh mozzarella cheese, drained and sliced
2 Tbsp thinly sliced fresh basil leaves
Instructions
In a medium bowl, whisk together lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper. Slowly whisk in the olive oil until the dressing is well combined.
Prepare the tomatoes:
Slice larger tomatoes into 1/4-inch-thick rounds.
Cut plum tomatoes into wedges.
Halve cherry, grape, or teardrop tomatoes.
On a serving platter, alternate layers of tomatoes and mozzarella slices.
Drizzle the lemon vinaigrette over the salad.
Sprinkle with fresh basil and additional salt and pepper to taste.
