Eckert’s Peach Buttercream Frosting

Everything is peachy in Eckert’s Country Store! Before I left the store last night, I was standing in the peach room taking in the smell of tree-ripened peaches. That was all I needed to inspire me to make one of my favorite frosting recipes for company last evening. I decided to dress up sliced peaches and Eckert’s Peaches N Cream Cake for a simple, last-minute dessert. Canning jars are so popular right now – just spend a few minutes searching “desserts in jars” on Pinterest and you too will be inspired!!

I love this frosting recipe because you can substitute seasonal fruit. I have made it with blackberries and strawberries as well as peaches.  It is wonderful on pound cake, angel food cake and cupcakes. Since it includes fresh fruit, be sure to refrigerate any remaining frosting (a rarity at my house).After making the frosting, I placed a few cubes of cake in an 8 oz jar. I topped it with some sliced peaches and a teaspoon of frosting. Then I repeated the layers again. The filled jar just sings of summer’s sweetness!

Ingredients

  • 1 large peach, peeled and chopped
  • 3/4 cup butter, softened
  • 1 (32-oz.) package powdered sugar

Instructions

  1. Process peach in blender or food processor until puréed (purée should measure about 1/2 cup).
  2. Beat butter at medium speed with electric mixer until creamy; gradually add powdered sugar alternately with puréed peach, beating until well blended after peach addition.
