Grilled, broiled, steamed… it doesn’t matter how you prepare it, corn is always a crowd-pleaser. As seventh-generation Midwest farmers, the Eckert family knows a thing or two about corn. We don’t like to brag, but we like to think this is our forte! Ours is a sweet, bi-color (yellow and white) corn that’s not only yummy to eat, but a great source of vitamin C and fiber for the whole family.
How to pick and store corn.
Look for the ears of corn where the silk has started to brown and the husk is green. Then grab the ear and snap downward toward the stalk. To store, wrap tightly in plastic and store in the crisper of your fridge. If you’re not going to eat the corn within two or three days, freeze it by blanching the corn cobs, placing in plastic storage bags, and putting them in the freezer immediately.
