In celebration of the fall season, we asked Samantha King, blogger at Nifty Mom, to visit our farm to create a delicious fall inspired recipe highlighting our homegrown apples.
As we are in the midst of apple season with a variety of apples ready to be picked at Eckert’s, I am busy in the kitchen. When we bring home those bags of fresh picked apples, the kids and I sort them out.
The kids first pick their favorite ones to keep in the fruit bowl to enjoy with lunches and snacks. Next, we set aside about 10 pounds to make applesauce and apple butter. Then it is time to pick recipes for the rest.
Of course, an apple pie and apple crisps are a must. There are so many delicious recipes to make with apples, it can be hard to pick. This week, I decided to make Eckert’s Waldorf Salad.
The best part of the recipe (other than the taste) is that I can make it with the kids. They can help measure, mix and the older ones can chop the ingredients. It is a great way to get the family together in the kitchen and make memories.
This recipe uses red apples, and we used Red Delicious picked fresh from the orchard trees. Visit the crop updates to see what is ready to be picked at each farm and have fun in the kitchen. See you soon!
Eckert’s Waldorf Salad
Ingredients:

2 cups red apples, finely chopped

1 cup celery, finely chopped

¼ cup pecans or walnuts, chopped

¾-1 cup mayonnaise
-
1 cup seedless grapes, halved

Lettuce leaves
-
Optional: ½ cup fresh or called pineapple, chopped and drained
Instructions:
1. Combine apples, celery, and nuts in a medium bowl.
2. Stir in enough mayonnaise to moisten.
3. Add grapes (and/or pineapple, if desired).
4. Cover and refrigerate until ready to serve.
5. Serve on lettuce.
